Description
These moist Apple Cinnamon Muffins are loaded with fresh apples, warm cinnamon, and buttery flavor. Perfect for breakfast, brunch, or an afternoon snack.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg (optional)
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk
1 1/2 cups peeled and diced apples
2 tablespoons coarse sugar (optional)
Instructions
1. Preheat oven to 375°F (190°C) and line a 12-cup muffin pan.
2. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. Whisk melted butter with both sugars until smooth.
4. Beat in eggs one at a time, then vanilla.
5. Mix half the dry ingredients into the wet ingredients.
6. Add buttermilk, then remaining dry ingredients.
7. Fold in diced apples gently.
8. Fill muffin cups three-quarters full.
9. Sprinkle coarse sugar on top if desired.
10. Bake for 18–22 minutes until golden and a toothpick comes out clean.
11. Cool for 5 minutes before transferring to a wire rack.
Notes
Do not overmix the batter.
Use Granny Smith or Honeycrisp apples.
Store at room temperature for 3 days.
Freeze for up to 3 months.
