Description
Tender crockpot BBQ chicken served over roasted sweet potatoes with black beans, corn, cheddar cheese and fresh cilantro for an easy high-protein meal prep recipe.
Ingredients

- 2 large boneless skinless chicken breasts
- 1 cup low sugar BBQ sauce
- 1/2 cup chicken broth
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt
- Black pepper
- 2 medium sweet potatoes diced
- 1 tablespoon olive oil
- 1/2 teaspoon cinnamon
- 1/2 cup black beans
- 1/2 cup corn
- 1/4 cup diced red onion
- 1/4 cup shredded cheddar cheese
- Fresh cilantro
- Lime wedges
Instructions
1. Place chicken into crockpot.
2. Mix BBQ sauce, broth, vinegar and seasonings.
3. Pour over chicken.
4. Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
5. Shred chicken inside slow cooker.
6. Roast sweet potatoes at 400°F for 25-30 minutes.
7. Assemble bowls with sweet potatoes, chicken, beans and corn.
8. Top with cheese, cilantro and lime.
9. Serve immediately or store for meal prep.
Notes
- Use low sugar BBQ sauce.
- Store in refrigerator for 4 days.
- Freeze for up to 3 months.
- Reheat with a splash of broth.
