Creamy Cheddar Herb Twice Baked Potatoes loaded with sharp cheddar cheese, fresh herbs, buttery potato filling, and crispy bacon. A perfect comfort food side dish for holidays, family dinners, and entertaining.
Ingredients
- 4 large russet potatoes
- 2 cups sharp cheddar cheese, shredded
- 8 slices bacon, cooked crispy and crumbled
- 4 tablespoons butter, softened
- 1/2 cup sour cream
- 1/4 cup whole milk
- 3 green onions, sliced
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 2 tablespoons olive oil
- 1/2 cup extra cheddar cheese for topping
Instructions
1. Preheat oven to 400°F.
2. Wash and dry potatoes thoroughly.
3. Rub potatoes with olive oil and salt.
4. Bake for 50-60 minutes until fork tender.
5. Cook bacon until crispy and crumble.
6. Slice baked potatoes lengthwise.
7. Scoop potato flesh into a mixing bowl.
8. Add butter, sour cream, milk, and seasonings.
9. Mash until smooth and creamy.
10. Mix in cheddar cheese, herbs, green onions, and bacon.
11. Fill potato shells with mixture.
12. Top with remaining cheddar and bacon.
13. Bake again for 15-20 minutes.
14. Broil for 1-2 minutes if desired.
15. Rest for 5 minutes before serving.
