Description
Golden crispy potato skins loaded with cheddar cheese, smoky bacon, ranch seasoning, and topped with sour cream and chives. The perfect party appetizer or game day snack.
Ingredients
- 6 medium russet potatoes
- 3 tablespoons olive oil or melted butter
- 1/2 pound thick-cut bacon, cooked and crumbled
- 2 cups shredded cheddar cheese
- 1 cup Monterey Jack cheese (optional)
- 2 teaspoons ranch seasoning
- Sour cream
- Ranch dressing (optional)
- Fresh chives or scallions
- Black pepper
Instructions
1. Preheat oven to 400°F and bake potatoes for 45–50 minutes.
2. Cool slightly and slice potatoes in half.
3. Scoop out most of the flesh, leaving a 1/4-inch shell.
4. Increase oven to 475°F.
5. Brush shells with oil or butter.
6. Bake skin-side up for 7 minutes.
7. Flip and bake another 7 minutes until crispy.
8. Sprinkle ranch seasoning into each shell.
9. Fill with cheese and bacon.
10. Bake 2–5 minutes until cheese melts.
11. Top with sour cream, chives, black pepper, and extra ranch seasoning.
12. Serve immediately.
Notes
- Use Russet potatoes for the crispiest skins.
- Air fryer reheats leftovers perfectly.
- Freeze before adding sour cream.
- Customize with jalapeños or pepper jack cheese.
