Description

Chicken Marbella is a classic Mediterranean-inspired baked chicken recipe featuring juicy chicken thighs, sweet prunes, green olives, capers, garlic, oregano, and lemon roasted in a rich sweet-savory sauce.


Ingredients

  • 8 bone-in skin-on chicken thighs
  • 1/2 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1 cup pitted prunes
  • 1/2 cup green olives
  • 1/2 cup capers with juice
  • 4 garlic cloves minced
  • 3 tbsp dried oregano
  • 2 bay leaves
  • 1/2 cup brown sugar
  • Juice of 1 lemon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth
  • 2 tbsp chopped fresh parsley

Instructions

1. Whisk olive oil, vinegar, garlic, oregano, lemon juice, salt, pepper and bay leaves.

2. Add chicken, prunes, olives and capers.

3. Marinate at least 4 hours or overnight.

4. Preheat oven to 350°F.

5. Transfer everything into a baking dish.

6. Sprinkle brown sugar over chicken.

7. Pour chicken broth around the edges.

8. Bake 50–60 minutes until chicken reaches 165°F.

9. Rest for 10 minutes.

10. Garnish with parsley and serve with pan juices.
