Ingredients
1/4 cup soy sauce
2 tablespoons mirin
2 tablespoons honey
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon cornstarch
2 tablespoons water
8 ounces (225 g) lo mein noodles, ramen, or spaghetti
1 pound (450 g) boneless, skinless chicken breast, thinly sliced
2 tablespoons vegetable oil
1 small onion, thinly sliced
1 bell pepper, thinly sliced
1 carrot, julienned
1 cup broccoli florets
2 green onions, chopped
Sesame seeds, for garnish
Instructions
1. Whisk the soy sauce, mirin, honey, sesame oil, garlic, and ginger together in a small bowl. In another bowl, stir the cornstarch with 2 tablespoons water until smooth.
2. Cook the noodles according to the package directions until just tender. Drain them thoroughly and set aside.
3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5–6 minutes, stirring as needed, until golden and the internal temperature reaches 165°F (74°C). Transfer the chicken to a clean plate.
4. Add the onion, bell pepper, carrot, and broccoli to the skillet. Stir-fry for 3–4 minutes until the vegetables become crisp-tender.
5. Return the chicken to the skillet. Stir the prepared teriyaki sauce and pour it over the chicken and vegetables. Bring it to a gentle simmer.
6. Stir the cornstarch slurry again and add it to the skillet. Stir until the teriyaki sauce thickens and becomes glossy.
7. Add the cooked noodles and toss until the chicken, vegetables, and noodles receive an even coating of sauce. Heat briefly until everything becomes hot.
8. Remove from the heat. Garnish with chopped green onions and sesame seeds, then serve immediately.
Notes
Cook the noodles only until just tender because they will cook briefly again in the skillet.
Lo mein, ramen, or spaghetti work well for this recipe.
