- 1 1/2 pounds boneless skinless chicken thighs
- 3 tablespoons olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and black pepper
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon fresh dill
- 4 pita breads
- 1 cup romaine lettuce
- 1 tomato diced
- 1/2 red onion sliced
- Feta cheese
- Fresh parsley
Instructions
1. Mix marinade ingredients and coat chicken.
2. Refrigerate for 30 minutes.
3. Mix tzatziki ingredients and chill.
4. Cook chicken 5 to 6 minutes per side.
5. Rest and slice chicken.
6. Warm pita bread.
7. Add tzatziki, chicken, vegetables, and feta.
8. Wrap and serve immediately.
Notes
- Chicken thighs stay juicier than breasts.
- Tzatziki tastes better after chilling.
