Description
Creamy Broccoli Cheese Soup is rich, cheesy, and loaded with fresh broccoli, carrots, garlic, and sharp cheddar. Ready in only 30 minutes, this comforting homemade soup makes an easy lunch or family dinner.
Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 2 cups vegetable broth
- 1½ cups milk
- 1 cup heavy cream
- 3 cups broccoli florets
- 1 medium carrot, shredded
- 2 cups freshly shredded sharp cheddar cheese
- Salt to taste
- Black pepper to taste
- Pinch of nutmeg (optional)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Cook onion until soft then stir in garlic.
3. Add flour and cook for one minute.
4. Whisk in vegetable broth.
5. Add milk and heavy cream.
6. Stir in broccoli and carrot.
7. Simmer for 10–15 minutes until broccoli is tender.
8. Blend all or part of the soup if desired.
9. Reduce heat and stir in cheddar cheese until melted.
10. Season with salt, pepper and nutmeg.
11. Rest for 5 minutes before serving.
Notes
- Freshly shred your own cheddar for smoother melting.
- Do not boil after adding cheese.
- Store refrigerated up to 4 days.
- Freeze before adding dairy for best texture.
