Ingredients
4 boneless skinless chicken breasts
4 garlic cloves minced
1 cup heavy cream
2 pounds potatoes peeled and cubed
2 tablespoons butter
1 tablespoon olive oil
Salt to taste
Black pepper to taste
Fresh parsley for garnish
Instructions
1. Boil the potatoes in salted water until fork tender.
2. Season chicken with salt and pepper.
3. Cook chicken in olive oil until golden and fully cooked.
4. Remove chicken and sauté garlic in the same skillet.
5. Pour heavy cream into skillet and simmer until slightly thickened.
6. Return chicken to skillet and coat with garlic sauce.
7. Drain potatoes and mash with butter salt and pepper.
8. Serve creamy garlic chicken over mashed potatoes and garnish with parsley.
Notes
Use Yukon Gold potatoes for creamier mashed potatoes.
Add Parmesan cheese for extra flavor.
Store leftovers in the refrigerator for up to 3 days.
