Description
Creamy Tuscan Salmon Orzo is an easy one-pot dinner featuring perfectly seared salmon, creamy Parmesan orzo, spinach, garlic, and sun-dried tomatoes in a rich Italian-inspired sauce.
Ingredients
- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and black pepper
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 small onion, diced
- 1 cup sun-dried tomatoes, sliced
- 1 1/2 cups orzo
- 1/2 cup dry white wine
- 3 1/2 cups chicken broth
- 1 cup heavy cream
- 3 cups baby spinach
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- 1 lemon, zest and juice
Instructions
1. Pat salmon dry and season with paprika, garlic powder, salt and pepper.
2. Heat olive oil and sear salmon for 3 to 4 minutes per side until golden. Remove.
3. Melt butter and cook onion until softened.
4. Add garlic and sun-dried tomatoes.
5. Stir in orzo and toast for 2 minutes.
6. Deglaze with white wine.
7. Add broth, cream, Italian seasoning and lemon zest.
8. Cook orzo for 10 to 12 minutes while stirring often.
9. Stir in spinach until wilted.
10. Mix in Parmesan cheese until melted.
11. Return salmon to the skillet and simmer 2 to 3 minutes.
12. Finish with lemon juice and garnish before serving.
Notes
- Use freshly grated Parmesan for the smoothest sauce.
- Add extra broth if the orzo thickens too much.
- Store leftovers up to 3 days.
- Reheat with a splash of cream or broth.
