Ingredients

Instructions
1. Wash and cube potatoes into 1-inch pieces.
2. Parboil potatoes for 5-7 minutes until slightly tender.
3. Drain thoroughly and allow excess moisture to evaporate.
4. Toss potatoes with olive oil, garlic powder, salt, and pepper.
5. Preheat oven to 425°F (220°C).
6. Spread potatoes on a baking sheet in a single layer.
7. Roast for 20-25 minutes, flipping halfway through.
8. Serve hot with fresh herbs if desired.
