Description
Easy Garlic Butter Shrimp Scampi is a classic Italian seafood dinner featuring tender shrimp sautéed in a rich garlic butter sauce with fresh lemon and parsley, served over linguine pasta.
Ingredients
- 1 lb large shrimp, peeled and deveined
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 lemon, juiced
- 1 lemon, zested
- 2 tbsp fresh parsley, chopped
- Pinch red pepper flakes
- 1/2 tsp salt
- 8 oz linguine or spaghetti
- 1 tbsp olive oil
- 1/2 cup chicken or vegetable broth
- 1/4 tsp black pepper
- 2 tbsp scallions, optional
Instructions
1. Pat shrimp dry with paper towels.
2. Cook pasta according to package directions and reserve 1 cup pasta water.
3. Heat olive oil in a large skillet over medium heat.
4. Add garlic and sauté for 1 minute.
5. Add shrimp, salt, pepper, and red pepper flakes.
6. Cook shrimp 2 to 3 minutes per side until pink.
7. Add broth, butter, lemon juice, and lemon zest.
8. Simmer for 2 to 3 minutes.
9. Add cooked pasta and toss to coat.
10. Use reserved pasta water if needed.
11. Garnish with parsley and scallions.
12. Serve immediately.
Notes
- Use fresh shrimp for best flavor.
- Do not overcook the shrimp.
- Add extra lemon juice for a brighter taste.
- Store leftovers in an airtight container for up to 3 days.
