- 1 tbsp butter
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese
- 2 cups cooked rice
- 3 tbsp chopped cilantro
- 1½ limes
- ¼ tsp cayenne pepper optional
Instructions
1. Season the chicken with oil and spices.
2. Cook chicken until it reaches 165°F.
3. Allow chicken to rest before slicing.
4. Char the corn in butter with remaining spices.
5. Mix mayonnaise sour cream lime juice and cotija cheese.
6. Stir half of the corn into the creamy sauce.
7. Mix rice with cilantro and lime juice.
8. Assemble bowls with rice chicken corn and sauce.
9. Garnish with cilantro cotija cheese and lime wedges.
