A comforting collection of healthy fall recipes designed for weight loss and seasonal eating.
Ingredients
2 cups pumpkin puree
1 cup lentils
1 sweet potato diced
1 onion chopped
2 carrots chopped
4 cups vegetable broth
1 tsp cinnamon
1 tsp paprika
1 tbsp olive oil
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot.
2. Cook onion and carrots for 5 minutes.
3. Add sweet potato and lentils.
4. Pour in broth and pumpkin puree.
5. Season with cinnamon, paprika, salt and pepper.
6. Simmer for 30 minutes until vegetables soften.
7. Blend partially for a creamy texture.
8. Serve warm and enjoy.
Notes
Store leftovers in the refrigerator for 4 days.
Freeze for up to 3 months.
Use chicken broth if preferred.
