Ingredients
- 2 pounds red potatoes
- 1 cup ranch dressing
- 6 slices bacon cooked and crumbled
- 1/2 cup green onions chopped
- 1 cup celery diced
- 1 cup cheddar cheese shredded
- 1/4 cup fresh parsley chopped
- Salt to taste
- Black pepper to taste
Instructions
1. Wash and cube the red potatoes.
2. Boil potatoes in salted water for 10 to 15 minutes until fork tender.
3. Drain potatoes and cool slightly.
4. Cook bacon until crispy and crumble into pieces.
5. Chop green onions, celery, and parsley.
6. Combine potatoes, ranch dressing, bacon, celery, green onions, and cheddar cheese in a large bowl.
7. Season with salt and pepper.
8. Chill the salad for 30 minutes before serving.
9. Garnish with parsley and serve cold.
Notes
- Do not overcook the potatoes.
- Add bacon just before serving for extra crispiness.
