Creamy, cheesy Keto Crack Chicken made in the slow cooker. A simple low carb crock pot recipe packed with flavor and perfect for meal prep.
Ingredients
2 lbs boneless skinless chicken breasts
8 oz cream cheese
1 cup shredded cheddar cheese
1 tbsp ranch seasoning
8 slices bacon cooked and crumbled
2 green onions sliced
1/2 tsp garlic powder
1/2 tsp black pepper
Instructions
1. Place chicken breasts in the crock pot.
2. Add cream cheese, ranch seasoning, garlic powder, and pepper.
3. Cook on LOW for 6 hours or HIGH for 3-4 hours.
4. Shred the chicken using two forks.
5. Stir in cheddar cheese and half of the bacon.
6. Cook for 10 minutes until cheese melts.
7. Top with remaining bacon and green onions.
8. Serve over cauliflower rice or in lettuce wraps.
Notes
Store in refrigerator for up to 4 days.
Freeze for up to 2 months.
Serve with cauliflower mash or green vegetables.
