Description
Make this One-Pot Taco Pasta in only 35 minutes. Seasoned ground beef, pasta, black beans, corn, salsa, and melted cheddar cook together for an easy family dinner.
Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tablespoons taco seasoning
- 1 can diced tomatoes, 14 ounces, with juices
- 1 cup salsa
- 3 cups chicken or beef broth
- 12 ounces short pasta, such as rotini, shells, or penne
- 1 can black beans, 15 ounces, drained and rinsed
- 1 cup frozen corn
- 2 cups shredded cheddar or Mexican-blend cheese
- Optional: cilantro, avocado, sour cream, jalapeños, lime wedges, green onions, or tortilla chips
Instructions
1. Heat a large Dutch oven or deep skillet over medium heat. Add the ground beef and cook for 5 to 6 minutes while breaking it apart.
2. Add the diced onion and cook until softened. Stir in the garlic and cook for 1 minute. Drain excess grease when necessary.
3. Sprinkle the taco seasoning over the beef. Stir and cook for 1 minute to release the flavor of the spices.
4. Add the diced tomatoes, salsa, and broth. Stir well and bring the mixture to a gentle boil.
5. Add the uncooked pasta and press it into the liquid. Reduce the heat, cover, and simmer for 12 to 15 minutes. Stir every few minutes.
6. Stir in the black beans and frozen corn. Cook for another 2 to 3 minutes.
7. Remove the pot from the heat. Stir in 1 1/2 cups cheese until melted. Sprinkle the remaining cheese over the top and cover for 2 minutes.
8. Garnish with your preferred taco toppings and serve immediately.
Notes
- Add a small splash of broth when reheating to restore the creamy consistency.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freeze individual portions for up to 3 months.
