Fresh Peach Salsa for Tacos is a quick and colorful homemade salsa made with ripe peaches, tomatoes, jalapeños, cilantro, lime, and simple seasonings. Ready in just 15 minutes, it’s the perfect topping for fish, shrimp, chicken, pork, steak, and vegetarian tacos.
Ingredients
- 4 large ripe peaches, diced
- 2 Roma tomatoes, diced
- 1/2 medium red onion, finely diced
- 1 jalapeño, minced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 garlic clove, minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1 teaspoon honey (optional)
- 1/2 cup diced red bell pepper
- 1 medium avocado, diced (optional)
- 1/2 cup fresh corn kernels (optional)
Instructions
1. Wash and dice all fruits and vegetables.
2. Mince the jalapeño and garlic.
3. Combine peaches, tomatoes, onion, bell pepper, jalapeño, cilantro, garlic, lime juice, zest, cumin, salt and pepper.
4. Add honey if needed and stir gently.
5. Refrigerate for 20 to 30 minutes.
6. Fold in avocado and corn before serving if using.
7. Taste and adjust seasoning before serving chilled.
Notes
- Use ripe but firm peaches.
- Best served the same day.
- Store refrigerated for up to 3 days.
- Do not freeze.
