Description
Creamy homemade piñon ice cream featuring authentic roasted Southwestern piñon nuts, honey, and a rich custard base.
Ingredients
- ¾ cup roasted piñon nuts
- 2 cups heavy cream
- 1 cup whole milk
- ⅔ cup granulated sugar
- 4 large egg yolks
- 1 tablespoon honey
- Pinch of salt
Instructions
1. Toast the piñon nuts until fragrant.
2. Grind most of the nuts and reserve some for topping.
3. Heat cream, milk, and sugar until sugar dissolves.
4. Whisk egg yolks in a separate bowl.
5. Temper yolks with hot cream mixture.
6. Return mixture to saucepan and cook until thickened.
7. Add ground piñon nuts and steep for 30 minutes.
8. Strain the mixture through a fine mesh sieve.
9. Stir in honey and salt.
10. Chill overnight.
11. Churn in an ice cream maker for 20 to 25 minutes.
12. Transfer to a container and fold in reserved nuts.
13. Freeze for 4 hours before serving.
Notes
- Use authentic New Mexico piñon nuts for the best flavor.
- Chill the custard overnight for maximum creaminess.
- Store in an airtight container for up to 10 days.
