Description
Tender slow cooker corned beef and cabbage with potatoes and carrots. A traditional comfort food recipe perfect for family dinners and St. Patrick’s Day celebrations.
Ingredients
- 3–4 lb corned beef brisket with seasoning packet
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 lb baby potatoes
- 4 large carrots, cut into chunks
- 1 small green cabbage, cut into wedges
- 2 bay leaves
- 1 tbsp whole grain mustard (optional)
Instructions
1. Rinse the corned beef under cold water and pat dry.
2. Place onions and garlic in the bottom of the slow cooker.
3. Add the corned beef and sprinkle with the seasoning packet.
4. Pour beef broth around the brisket and add bay leaves.
5. Add potatoes and carrots around the meat.
6. Cover and cook on LOW for 8-10 hours.
7. Add cabbage wedges during the last 2 hours of cooking.
8. Remove corned beef and let rest for 10 minutes.
9. Slice against the grain and serve with vegetables.
Notes
- Add cabbage only during the final 2 hours.
- Flat-cut brisket slices more neatly.
- Store leftovers in the refrigerator for up to 5 days.
- Serve with mustard or horseradish sauce.
