Description
Creamy homemade strawberry ice cream layered with a buttery golden cookie crunch for an unforgettable frozen summer dessert.
Ingredients
- 2 cups fresh strawberries, chopped
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup granulated sugar, divided
- 4 egg yolks
- 1 teaspoon vanilla extract
- 2 cups crushed vanilla sandwich cookies
- 5 tablespoons melted butter
- 2 tablespoons brown sugar
- Whipped cream for garnish
- Fresh strawberries for garnish
Instructions
1. Cook strawberries with half the sugar until soft and syrupy.
2. Cool the strawberry mixture completely.
3. Heat milk, cream and remaining sugar until steaming.
4. Temper egg yolks with the warm cream mixture.
5. Cook until the custard thickens.
6. Stir in vanilla and cooled strawberries.
7. Chill for 4 hours.
8. Churn in an ice cream maker.
9. Mix crushed cookies with butter and brown sugar.
10. Bake cookie mixture at 350°F for 8 to 10 minutes.
11. Cool completely.
12. Press half the crunch into a loaf pan.
13. Spread strawberry ice cream over the crunch layer.
14. Top with remaining cookie crunch.
15. Freeze for 4 hours.
16. Slice and serve with whipped cream and fresh strawberries.

- Cool the crunch completely before layering.
- Store covered in the freezer for up to one week.
- Use ripe strawberries for the best flavor.
