Ingredients
- 2 cups all-purpose flour
- 4 large eggs
- 2 cups milk
- 4 tablespoons melted butter
- 2 tablespoons matcha powder
- 1/2 cup sugar
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 2 egg yolks
- 1/4 cup sugar for pastry cream
- 1 teaspoon additional matcha powder
Instructions
1. Whisk flour, matcha powder, and sugar together.
2. Mix eggs, milk, and melted butter in a separate bowl.
3. Combine wet and dry ingredients until smooth.
4. Rest batter for 30 minutes.
5. Heat cream and vanilla for pastry cream.
6. Whisk egg yolks and sugar, then temper with hot cream.
7. Cook until thickened and stir in matcha.
8. Cool pastry cream completely.
9. Cook thin crepes in a lightly greased skillet.
10. Cool crepes on a wire rack.
11. Layer crepes with matcha pastry cream and strawberries.
12. Repeat until all crepes are stacked.
13. Finish with cream, strawberries, and a dusting of matcha powder.
14. Chill before slicing and serving.
