Description
Healthy Stuffed Shells with Spinach Ricotta are a wholesome Italian-inspired dinner featuring jumbo pasta shells stuffed with creamy ricotta, fresh spinach, mozzarella, parmesan, and baked in rich marinara sauce.
Ingredients
- 12 jumbo pasta shells
- 2 cups ricotta cheese
- 1½ cups chopped spinach
- 1½ cups shredded mozzarella cheese, divided
- ½ cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 garlic clove, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp chopped parsley
- 1 tsp olive oil
- Fresh basil for garnish
Instructions
1. Cook pasta shells until slightly firm.
2. Wilt spinach and squeeze dry.
3. Mix ricotta, spinach, mozzarella, parmesan, garlic, parsley and seasonings.
4. Spread marinara in baking dish.
5. Fill each shell generously.
6. Arrange shells over sauce.
7. Top with remaining sauce and mozzarella.
8. Cover and bake at 375°F for 25 minutes.
9. Uncover and bake another 10 minutes.
10. Rest for 5 minutes before serving.
Notes
- Frozen spinach works well.
- Prepare ahead and refrigerate overnight.
- Freeze before baking for up to 3 months.
- Serve with garlic bread or salad.
