Instructions

1. Mash the cooked sweet potato until smooth, measure 1 cup, and let it cool.

2. Heat a non-stick skillet or griddle over medium heat and lightly grease the surface.

3. Whisk the flour, brown sugar, baking powder, baking soda, salt, and cinnamon together.

4. In another bowl, whisk the egg, milk, melted butter, vanilla, and mashed sweet potato until creamy.

5. Fold the wet mixture into the dry ingredients just until combined. Add milk 1 tablespoon at a time if needed.

6. Let the pancake batter rest for 5 minutes.
