  • 1/3 cup chopped pecans, optional
  • 1 cup fresh berries, optional
  • 1/2 cup Greek yogurt, optional
  • Maple syrup, for serving

Instructions

1. Cook the sweet potatoes until completely tender. Remove the skins, mash the flesh until smooth, and measure 2 cups.

2. Preheat the waffle iron according to its instructions. Aim for about 375°F (190°C) when temperature control is available. Lightly grease the plates.

3. Whisk the mashed sweet potatoes, milk, eggs, melted butter, and vanilla until smooth.

4. In another bowl, whisk the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

5. Gently fold the dry ingredients into the wet mixture until just combined. Add 1–2 tablespoons of milk if needed. Fold in pecans if desired.

6. Allow the batter to rest for 5 minutes.

7. Spoon batter onto the hot waffle iron and cook for approximately 4–5 minutes, or until golden and crisp.

8. Transfer cooked waffles to a wire rack. Keep them warm in a 200°F oven while cooking the remaining batches.
