Description
Easy Taco Stuffed Peppers loaded with seasoned beef, rice, beans, corn, salsa and melted cheese for the perfect family dinner.
Ingredients
4 large bell peppers
1 tbsp olive oil
1 lb lean ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 packet taco seasoning
1 cup cooked rice
1 cup black beans, drained
1 cup corn kernels
1 can diced tomatoes with green chilies (14 oz)
1/2 cup salsa
1 cup shredded cheddar cheese
Fresh cilantro
Sour cream
Avocado slices
Instructions
1. Preheat oven to 375°F.
2. Slice peppers and remove seeds.
3. Brush peppers with olive oil.
4. Brown the ground beef.
5. Cook onion and garlic.
6. Add taco seasoning.
7. Stir in tomatoes and salsa.
8. Mix in rice, beans and corn.
9. Fill peppers.
10. Top with cheese.
11. Bake covered for 25 minutes.
12. Bake uncovered for 10 minutes.
13. Rest for 5 minutes.
14. Serve with cilantro, avocado and sour cream.
Notes
Ground turkey works well.
Use brown rice for extra fiber.
Freeze leftovers for up to three months.
Add jalapeños for extra heat.
